The man behind

Bistro Boheme has been one of the major successes on the Copenhagen restaurant scene in recent years, and what makes the place particularly interesting is that it focuses on “good old-fashioned French gastronomy.”

It’s not about trends. Nor about offering gourmet food at discount prices. Bistro Boheme is about giving guests a top-class taste experience, complemented by excellent service.

Per Thøstesen is the driving force behind this machinery. He is the man who attracts the right employees and retains them for years, which is also unusual in the industry.

In the book about Bistro Boheme, published in 2013, you can read the full story of how the boy, Per Thøstesen, decided to become a chef. How he purposefully aimed to get hired at the most famous restaurant of the time, namely with Paul Bocuse in France.

He endured the French challenges for three years and then continued out into the world, before finally returning home to a Denmark marked by fusion cuisine. Per rode the fusion wave for a few years, after which he “returned” to French gastronomy at Bistro Boheme.

Here, the guests welcomed him with open arms, and ever since, it has been a kind of mutual embrace between happy guests and Per’s outstanding French kitchen.
