Bistro Boheme is my life’s work. I can see that clearly when I look at what this book shows and tells about the place I have built together with my employees.
When I think of Boheme, I sometimes find it hard to see where I end and the restaurant begins — and vice versa. It is a part of me, and I am a part of it.
The latter is the most important, because it is a project that many people have a very large share in.
My staff is the most important thing I have. They are the ones who, every single day, carry on the spirit and make the restaurant something special for our guests together with me.
I’m lucky, but I have always placed great emphasis on being able to retain the most skilled people in the industry. That they want Bistro Boheme with all their heart is, ultimately, the best compliment a restaurateur can get — and I am proud of that.
