Stuffed young rooster breast served with seasonal vegetables, tarragon blanquette & potatoes

Crab mixed with dill-lime mayonnaise, layered with avocado crème & pickled tomatoes, capers, cress, grapefruit & cucumber in white balsamic vinegar
Tuna carpaccio served with passion fruit/pepper coulis, wasabi mayo & bitter greens
Slices of beef tenderloin served with haricots verts, mashed potatoes, red wine sauce & béarnaise
